What a fun gift to receive – Cake in a jar! This is a lemon Cherry cake, but you can use
any cake mix to make this cake.
Pour your favorite cake mix in a bowl, add the recommended
water, substitute applesauce for the oil and put in two egg whites and one
egg. Beat on high for three
minutes. The cake still tastes amazing,
but with a lot less fat and calories.
Next, spray a small pint size jar with non stick spray. Fill the jar three quarters full, so you’ll
have enough room at the top for your fruit.
Place your jar in a muffin pan. I
filled the other five spaces with cupcake liners and made some cupcakes and
baked for 15 minutes or until a toothpick comes out clean. Did you know cake
batter freezes? I poured the extra cake
mix into a freezer bag. That way next
time I want to make a cake in a jar I
just scoop out the frozen batter into a jar.
After your cake is done baking, let cool
about an hour then place cherries in a baggie and put in the jar. This is so that the cake won’t get
soggy. Then, the person you give the
gift to can pour the cherries on top and enjoy.
I trimmed the bag so it did not hang too far over the jar. To finish off I used the lid to trace on
scrapbooking paper and cut it out. I
attached the circle with tape on top of the lid.
I spelled out yummy with letter stickers and
placed the lid on the jar.
